SOOOO YUMMY!!!!
Ingredients:
- 1 tablespoon sugar
- 1 tablespoon ground cinnamon
- 1 cup shortening (I used butter)
- 1 1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract (I used part almond extract)
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cream of tartar
- (I replaced 2 1/2 teaspoons baking powder for the soda and cream of tartar)
Preparation:
In a shallow bowl, combine 1 tablespoon sugar and cinnamon; set aside. Cream shortening; gradually add 1 1/2 cups sugar, beating well. Add eggs; beat well. Stir in vanilla.
In a separate bowl, sift together flour, soda, salt and cream of tartar. Add sifted ingredients to creamed mixture; stir until well blended. Shape dough into 1-inch balls and roll in cinnamon-sugar mixture. Place snickerdoodles 2 inches apart on lightly greased baking sheets. (I dipped the ball in the sugar/cinnamon mixture then twisted and rolled it together then rolled it in again.)
Bake snickerdoodles at 400° for 6 minutes or until lightly browned. Remove to wire racks to cool. Makes about 4 dozen snickerdoodles. (from: http://southernfood.about.com/od/cookierecipes/r/30408c.htm)
